At the heart of Peshawri’s culinary philosophy is the traditional tandoor. The restaurant’s vegetarian and non-vegetarian offerings are cooked in separate clay ovens, using carefully selected ingredients, prime cuts and aromatic marinades. Years of skill and meticulous training go into mastering the tandoor—from balancing spices and preparing marinades to intuitively judging its intense heat for the perfect cook.
Among its celebrated signatures is the legendary Dal Bukhara, where whole black lentils are simmered with tomatoes, ginger and garlic over slow coal fires. Another Peshawri icon, the Naan Bukhara, is famed for its remarkable size and distinctive texture, making it as much a spectacle as it is a culinary indulgence. The meal culminates with its rich and creamy Kulfi, traditionally prepared by reducing an entire litre of milk to create each serving.
