The food does its own share of wandering, moving across cuisines rather than settling into one. A savoury doughnut turns up topped with fried egg and chorizo, a potato rösti sits under smoky romesco and cheese fondue, and beetroot-cured salmon finds its way into a croissant with horseradish cream and pineapple chutney. The pastas keep the surprises coming: sundried tomato pappardelle sharpened with gochugaru chilli, a black garlic fettuccine kept simple with butter and parmesan, and a plate of Hainanese chicken that takes the table on a quick detour to the hawker stalls of Singapore. It’s a menu built on seasonal, thoughtfully sourced ingredients and global technique, carrying NOVY’s ingredient-led approach across every course.
Alongside brunch classics like the Espresso Martini and Aperol Spritz sit two curated additions, the Green Mango Spritz and Injipuli Picante, while the zero-proof Crimson Bloom and Nutty Cloud bring the same ingredient-led thinking to the non-alcoholic side of the menu, built around fermented raw mango, hibiscus, hazelnut and cold brew. Dessert closes the afternoon on an indulgent note: a Berry Custard Bombolini filled with vanilla custard, a Couture Rocher layered with salted caramel and toasted hazelnuts, and a Pistachio Tiramisu carrying soft coffee-rum notes through every bite.
Somewhere between courses, the Mimosa Trolley makes its rounds, arriving tableside with chilled pours, fresh-cut fruit and delicate infusions. Guests pick their pour, Fresh Orange, Orange & Jasmine, or Lychee & Tomato, and sip through the afternoon at whatever pace suits them best. It’s a small, playful ritual, and by now, one of the things regulars look forward to most.
